                                Potato pancakes
                                4 med. un-cooked white potatoes
                                 1 egg
                                 1/2 c. softened chive and onion cream cheese
                                 1 tbs. flour
                                 1/4 c. whipped cream
                                 1 tsp. onion salt
                                 1/4 tsp. cayenne pepper
                                 3/4 c. shredded Swiss cheese
                                 1/4 c. canola oil
                                
                                    Peel and grate potatoes. Drain on paper towels. Squeeze dry and set aside.
                                    In a bowl, combine cream cheese and flour till blended.  Stir in egg , cream cheese, onion salt, cayenne pepper till smooth. Stir in potato and cheese. Heat skillet, use sm. amt. canola oil, drop batter by 1/3 cup fulls, press lightly, fry till golden...drain...makes 16 pancakes that can be frozen if left over.
